And since we are in a celebrating mood around here, I want to share with you this gorgeously simple recipe for French Onion Soup. Full of cheesy, savory, complex flavors this soup is surprisingly a cinch to prepare and will keep easily in the fridge or freezer. Quite simply, this is fall in a bowl.
I've already made 3 batches of various soups and slow cooked meals during the last week so if you are anything at all like me you are more than ready to dive into a recipe just like this. We have spent a couple of nights already this week, slurping hot soup in front of the t.v. thrilled with the return of all our favorite shows. My boys are addicted to watching re-runs of The Big Bang Theory (of which I love, love), Pawn Stars and Mountain Men, so they (and especially me) are more than ready for some new and exciting shows.
I just love this time of year. My introverted, slightly agoraphobic (I think) self is rejoicing at any excuse to stay home and nest, curl up with the animals and just chill.
